Curated by Our Colleagues

Our team doesn’t just work in Toronto; they’ve mastered it. They know which paths to take, which moments to pause for, the perfect rhythm of a winter day well spent. Here, two of our colleagues share how they experience the season, both throughout the city and within the hotel.

Fairmont Royal York's Executive Restaurant Chef, Roland Torok-Ducharme.

Restaurant Chef Roland Torok-Ducharme

For Chef Roland, a perfect winter day in Toronto balances discovery with the city’s iconic moments. As Executive Restaurant Chef at REIGN, he approaches the city the way he approaches a menu; with curiosity about ingredients, and an eye for what makes something exceptional. His ideal day moves from market to movement to history; each stop revealing a different side of Toronto in winter.

Morning

St. Lawrence Market Head to St. Lawrence Market. It’s been Toronto’s food hub for over 200 years; it’s considered one of the world’s best. Grab lunch from one of the vendors. A peameal bacon sandwich from Carousel Bakery is iconic, but there are dozens of options. Fresh sandwiches, international foods, and specialty items you won’t find anywhere else. For a chef or foodie, it’s the perfect lunch; you’re eating well, but you’re also seeing what’s in season and what the local producers are bringing in that week.

Afternoon
Ice-Skating at City Hall Nathan Phillips Square for skating. It’s quintessentially Toronto. The rink right in front of City Hall, the iconic Toronto sign, and the city all around you. They have skate rentals, food and drink vendors, and sometimes live music. It’s perfect for families, couples, and anyone really. There’s something about being right in the centre of everything.

Evening
Casa Loma In the evening, head to Casa Loma when the crowds thin out. Explore the architecture, the secret passageways, walk through the 800-foot underground tunnel, and the photo exhibitions. Check out the vintage car collection in the original stables. Browse the rotating exhibitions and rooms, then climb the towers for views over the city. You can see how Toronto’s grown around this place.

Fairmont Gold Director Alexis Bragagnolo

For Alexis, a perfect winter day in Toronto is all about intention. As Director of the Fairmont Gold Floor, she approaches the city the way she approaches hospitality; with thoughtful care, an appreciation for quiet luxury, and knowing when to pause. Her ideal day moves from restoration to discovery to indulgence; each stop a reminder that winter is best experienced when you embrace it fully.

Morning
Elmwood Spa After a crisp morning walk through the city, head over to Elmwood Spa, this is a great place to reset. Sink into the water therapies, book a seasonal treatment, and let time stretch between appointments. It’s the balance of indulgence and mindful relaxation. A reminder to pause and restore before the day really begins.

Afternoon
Bloor Street With energy restored take a stroll along Bloor Street. Holt Renfrew, Hermès, Gucci, Burberry, Tiffany & Co. Pause to admire the chic window displays and seasonal installations. The crisp air, muted city sounds, and sparkling lights make even a simple walk feel intentional and restorative.

Evening
REIGN Restaurant When it’s time for dinner, go to REIGN. The warm atmosphere pairs perfectly with the season. I never skip the Lobster Pasta. It’s indulgent and comforting, exactly what a cold evening calls for. Dining here is both a treat and a moment to savour.. After dinner, if you’re a guest on Gold, a nightcap by the fire is the perfect way to end the evening.
